Refreshing Salad for Hot Summer Day!




This refreshing Mandarin Orange and Almond Salad is perfect for a hot summer day! Have it as a meal with chicken on top, or as a use as a side dish to accompany any meal.


Ingredients:

Dressing:

1/2 cup olive oil

1/4 cup red wine vinegar

2 tbs fresh parsley, chopped

1 tsp each of salt & sugar

Fresh ground black pepper to taste


Salad:

6 green onions, sliced

3 stalks of celery, chopped

Large bag of your favourite lettuce mix

2, 10 oz cans of mandarin oranges (pour out any liquid before putting on the salad)

1/2 cups sliced almonds


Add green onions, celery, mandarin oranges and lettuce mix to a large bowl. Mix the Dressing ingredients thoroughly together in a separate container and pour over salad. Toss until mixed, top with sliced almonds and enjoy!
